Rotisserie chicken is quite possibly the best store bought, pre-cooked thing you could ever get your paws on. They’re cheap, cooked to perfection [Costco makes the best I’ve ever found] and they can be used for so many things! One of the things I like to use them for is chicken salad. This recipe marries the juiciness and tenderness found in the slow roasted chicken, with a splash of sweetness from the grapes and of course a lovely crunch from the celery and onions. Best part about this chicken salad? You won’t feel guilty about indulging in this one because it’s made with Greek yogurt, which is low-in fat and high in protein. Eat it on a romaine leaf [as seen above], in a pita pocket, or just right out of the bowl. Trust me, no judgement here. It’s that good!
// Rotisserie Chicken Salad //
- 1 rotisserie chicken, picked & shredded
- 1 tbsp light mayo
- 1/2 cup Greek yogurt
- 1/2 medium onion, chopped
- 2 celery stalks, chopped
- 1/2 cup grapes, halves
- 1 tbsp spicy brown mustard
- salt & pepper
combine chicken, celery, onions, and grapes in a large mixing bowl. then combine remaining ingredients in a small mixing bowl. stir the two mixtures together in the large mixing bowl. eat immediately or refrigerate for later.
