Triple A Pesto

Why Triple A Pesto you say? Well that’s because this is no ordinary pesto. It’s made with arugula, avocado, and almonds. Get it? I was feeling a little bit bored with the classic pesto made with strictly basil and pine nuts. So when I saw one of my favorites on the Food Network whipping up this unusual pesto, I was very intrigued. This pesto is delicious! Definitely different but perfect for a simple summer supper accompanied by your favorite pasta. Or perhaps as a base on a sandwich or pizza. It’s creamy, nutty, and light and bright thanks to the zesty lemon accents.

Triple A Pesto

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients

2 large avocados
2 limes, juiced
zest from one lemon
2 garlic cloves, minced
1 tbsp EVOO {extra virgin olive oil}
3 cups baby arugula
1/2 cup almonds, toasted
1 cup fresh basil leaves
1 cup grated parmesan cheese
salt & pepper to taste

Instructions

  1. combine all ingredients in a food processor.
  2. blend until creamy.
  3. when mixing with pasta, reserve 1 cup of cooking liquid to loosen the pesto sauce when combining.
