Why Triple A Pesto you say? Well that’s because this is no ordinary pesto. It’s made with arugula, avocado, and almonds. Get it? I was feeling a little bit bored with the classic pesto made with strictly basil and pine nuts. So when I saw one of my favorites on the Food Network whipping up this unusual pesto, I was very intrigued. This pesto is delicious! Definitely different but perfect for a simple summer supper accompanied by your favorite pasta. Or perhaps as a base on a sandwich or pizza. It’s creamy, nutty, and light and bright thanks to the zesty lemon accents.
- combine all ingredients in a food processor.
- blend until creamy.
- when mixing with pasta, reserve 1 cup of cooking liquid to loosen the pesto sauce when combining.
