I’ve been in a serious soup mood. This second week of January sure is a cheery one, isn’t it? Freezing temps, the flu spreading like a STD through a frat house and the grayest/shortest days we’ve seen in months. So I say, don’t be glum chum… have some soup!
This soup is comforting enough to make any day seem brighter with enough of a kick in the pants to put a little extra pep in your step. It’s like a brand new sweater from JCREW that you got on sale. It fits perfectly, is soft as anything, and wearing it around just makes you feel like a little twinkly ray of sunshine.

- Melt butter in a large pot over medium high heat. Saute onions until they become translucent. Add lemongrass, ginger, chili garlic sauce in with onions. Stir and then add spinach, carrots, fish sauce and EVOO. Saute until mixture becomes fragrant.
- Then add coconut milk and chicken broth. Bring to a boil and then quickly reduce the heat. Add chicken and let simmer over low heat for about 8-10 minutes.
- Meanwhile cook rice. To serve, spoon rice into bowls and pour soup over the rice. Enjoy!
