Mango Salsa

Holy heat & humidity batman. This weather has me feeling totally lethargic. Which also means I am quite unmotivated to cook up anything that’s going to  increase the temperature in my kitchen. Cue no cook salsa!

I’ve been wanting/craving mangoes lately. Something about the hot humid weather reminds me of being in the tropics. Which reminds me of refreshing tropical fruits. This salsa is so simple and so delicious, some might even eat it with a spoon. I choose to serve mine up with some veggie quesadillas, but this salsa would compliment just about anything you sat it next to. It’s sweet, salty, crunchy and spicy. It had allll the things, all the things. Give it a go and let me know what you think! Stay cool. ;)

Mango Salsa

Ingredients

one mango, chopped
one small yellow onion, chopped
one tomato, chopped
one red pepper, chopped
5-6 medium sized leaves basil, chiffonade
2-3 sprigs of parsley, chopped
Salt & pepper
drizzle of EVOO
1 tsp red pepper flakes

Instructions

  1. Place all chopped ingredients in a large mixing bowl.
  2. Drizzle with EVOO, season with salt & pepper to taste, and sprinkle red pepper flakes on.
  3. Stir well & serve!
