Thursday Things…

(1) Tried two new recipes last week that were drool worthy & definitely worth sharing…like nom-to-the-nom


The first being this beauty.  Slow Cooker Enchilada Quinoa FTW!! Really, enchilada anything FOR THE WIN…get real. This recipe was so easy and was thoroughly enjoyed by all.. especially on Cinco de Mayo! I added a few things like ground turkey, sliced black olives, sliced jalapenos, 1 chopped sweet potato, and some red pepper flakes to kick up the heat. It’s great as a stand alone dish but is also excellent rolled up into a corn tortilla! This recipe will definitely be find a reoccurring role in my slow-cooker performances. This gorgeous salad was the second recipe I tried this week that was/is definitely worth mentioning. Colorful, flavorful, and with just the right mix of crunchy-sweet-spicy-ness that was fresh & totally fulfilling. I used rotisserie chicken shredded / chopped off the bone for an easier/tastier option and actually made the sauce using 1/4 of an IPA beer because I forgot the limes! Fake it till ya make it, amiright? This Clinatro Lime Chicken Salad with Mango + Avocado is a man-worthy salad, no sissy stuff. Trust me – theory has been tested & approved 😉




(2) Had the privilege of being photographed by an incredibly talented local photographer, Emily Gude. She’s a dream to work with and truly just has the magic touch. She makes her subjects feel comfortable & at ease with lovely direction. Portraits, wedding/engagement, maternity, family … she does it all. (3) LOVE these (sound)bites 🙂




I bought a house ya’ll — yep,  it’s still pretty surreal but I’m beyond excited to begin this new chapter growing some roots firmly in the ground. It feels like a dream but a wonderfully-real & I’ve earned this, kind of dream. Naturally my mind is going 100 mph thinking about every step and nuance in the home-buying/ moving / decorating / DIYing process. This has without a doubt reaffirmed my long time love with interior decor — as I get older I feel like my homie style is more and more a reflection of me. A little bit traditional, a little fiery and outspoken, a little wanderlusty and adventuresome, but blanketed with a whole lotta warm & cozy.
