Summer Patio Party // Grilled Flatbread Pizzas

It’s SUMMER so get out there a sweat over that grill already–with a beverage of course! We threw these super scrumptious / super easy flatbread pizzas together and toasted’em up over an open flame because that’s how we roll.

Grilled Flatbread Pizzas

Ingredients

1 lb ground lamb or beef or chickpeas for a vegetarian friendly version
1 red onion, halved and sliced
2-3 cloves of garlic, minced
2 bell peppers, sliced
1 cup Greek yogurt
1 cucumber, finely chopped
oregano
cilantro
basil
parsley
pita bread or naan bread
evoo
5-6 garlic cloves, minced
salt + pepper
for chimichurri sauce
1/2 cup red wine vinegar
1 teaspoon kosher salt plus more
3-4 garlic cloves, thinly sliced or minced
1 shallot, finely chopped
1 Fresno chile or red jalapeño, finely chopped
1/2 cup minced fresh cilantro
1/4 cup minced fresh flat-leaf parsley
2 tablespoons finely chopped fresh oregano
3/4 cup extra-virgin olive oil

Instructions

    For Chimichurri Sauce
  1. Combine vinegar, 1 tsp. salt, garlic, shallot, and chile in a medium bowl and let stand for 10 minutes.
  2. Stir in cilantro, parsley, and oregano.
  3. Using a fork, whisk in oil. Remove 1/2 cup chimichurri to a small bowl, season with salt to taste, and reserve as sauce.
  4. For Yogurt Sauce
  5. Combine cilantro, cucumber, and Greek Yogurt. Use a bit of EVOO to loosen - you want this to be a thick and creamy yet liquid sauce. Salt and Pepper to taste.
  6. For Flatbread Pizzas
  7. Fire up the grill and clean the rungs well. Coat with a non-stick spray or EVOO.
  8. Cook ground meat ahead of time. Season heavily with s+p, garlic and oregano. We made a vegetarian version with chickpeas and cooked it the same as we could have the meat -- only adding a bit more EVOO then we would have if we were just browning the meat.
  9. Brush on side of flatbreads with EVOO - place this side on the grill.
  10. Then layer the other side by starting with chimichurri sauce as the base. Then topping it with the meat, onions, peppers, and tomatoes.
  11. Close grill lid - let cook for 8-10 minutes over low flames. Check periodically -- no one likes burned pizza!
  12. When crisp -- remove from grill. Top with yogurt sauce, any fresh herbs and serve immediately!
